Winter Persimmon & Pomegranate Spinach Salad
Ingredients
6 cups fresh baby spinach
2 persimmons, sliced
1/2 cup pomegranate seeds
1/4 cup crumbled goat cheese
1/4 cup whole almonds
Dressing:
3 tbsp olive oil
2 tbsp freshly squeezed orange juice
1 tbsp apple cider vinegar
1 tsp honey or maple syrup
Pinch of salt and pepper
Directions
Prepare the Salad Base:
In a large salad bowl, layer the baby spinach, persimmon slices, pomegranate seeds, and almonds.
Make the Dressing:
In a small bowl, whisk together olive oil, orange juice, apple cider vinegar, honey, salt, and pepper.
Assemble the Salad:
Drizzle the dressing over the salad. Toss gently to coat all the ingredients evenly. Sprinkle crumbled goat cheese on top before serving.
