White Chocolate Cranberry Cookies

Ingredients

1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup dried cranberries
1 cup white chocolate chunks (or chips)
Directions

Preheat Oven:
Set oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream Butter & Sugars:
In a large bowl, beat softened butter, brown sugar, and granulated sugar until fluffy. Add eggs one at a time, then mix in vanilla extract.

Mix Dry Ingredients:
In another bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to the wet ingredients, mixing until combined.

Add the Mix-Ins:
Fold in dried cranberries and white chocolate chunks.

Scoop & Bake:
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until edges are golden.

Cool & Enjoy:
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
