White Chicken Chili

Description

White Chicken Chili

Ingredients:

2 tbsp olive oil

1 medium onion, chopped

3 garlic cloves, minced

2 cups shredded cooked chicken

2 cans (15 oz each) white beans, drained and rinsed

1 can (15 oz) sweet corn, drained

1 can (4 oz) diced green chilies

4 cups chicken broth

1 tsp cumin

1 tsp chili powder

1/2 tsp oregano

Salt and pepper to taste

Sour cream and chopped cilantro for garnish

Instructions:

1. Sauté Vegetables:

Heat olive oil in a large pot over medium heat.

Add onion and garlic; cook until softened.

2. Combine Ingredients:

Add shredded chicken, white beans, corn, green chilies, and chicken broth.

Stir in cumin, chili powder, oregano, salt, and pepper.

3. Simmer:

Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.

4. Serve:

Ladle the chili into bowls, top with sour cream and cilantro, and serve hot.
