Warm Italian Pasta Salad

Ingredients

For the Pasta Salad:

12 oz bowtie (farfalle) pasta
1 cup cherry tomatoes, halved (mix of colors if available)
1/2 cup mixed olives (green and Kalamata), pitted
1/4 cup fresh basil leaves, torn
1/4 cup grated Parmesan cheese
For the Dressing:

1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 clove garlic, minced
1/2 tsp dried oregano
1/4 tsp red pepper flakes (optional)
Salt and black pepper to taste
Instructions

Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the bowtie pasta until al dente according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.

Prepare the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, red pepper flakes (if using), salt, and black pepper.

Mix the Salad:
While the pasta is still warm, transfer it to a large bowl. Add the cherry tomatoes, mixed olives, and torn basil leaves. Pour the dressing over the pasta and toss to combine. If the salad seems dry, add a splash of the reserved pasta water.

Serve Warm:
Sprinkle grated Parmesan cheese on top and serve immediately.

Cook Time: 15 minutes
Servings: 4-6
