Vibrant Purple Frosting
Ingredients:
1 ¾ cups all-purpose flour
¾ cup black cocoa powder or dark chocolate cocoa powder
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 cups granulated sugar
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the Purple Buttercream Frosting:
1 ½ cups unsalted butter, softened
5-6 cups powdered sugar
½ cup heavy cream
2 teaspoons vanilla extract
Purple gel food coloring (adjust to achieve the desired shade)
For the Topping:
Fresh blackberries
Fresh blueberries
Fresh red currants
Fresh mint leaves
Optional:
Berry syrup or glaze (to coat the berries for added shine and sweetness)
Instructions Overview:
Cake Layers: Sift together the flour, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, beat the sugar, eggs, milk, oil, and vanilla until smooth. Gradually add the dry ingredients, then mix in the boiling water until the batter is well combined. Divide the batter into greased and floured cake pans and bake until a toothpick comes out clean.
Frosting: Beat the softened butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla extract. Mix in the purple food coloring until you reach the desired shade. Frost the cooled cake layers with the purple buttercream.
