Ingredients:
For the Crispy Chicken:
2 boneless, skinless chicken thighs
1 cup buttermilk
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 cup all-purpose flour
1/2 cup cornstarch (for extra crispiness)
1 tsp cayenne pepper (adjust for spice level)
Vegetable oil (for frying)
For the Spicy Sauce:
1/4 cup mayonnaise
2 tbsp hot sauce
1 tbsp honey
1 tsp Dijon mustard
1/2 tsp smoked paprika
For the Sandwich:
2 brioche burger buns
2 slices cheddar or pepper jack cheese
2 tbsp butter (for toasting buns)
Pickles (optional)
Instructions:
Marinate the Chicken:
In a bowl, mix buttermilk, salt, pepper, smoked paprika, garlic powder, and onion powder.
Add chicken thighs, cover, and refrigerate for 1 hour (overnight is best!).
Prepare the Breading:
In a separate bowl, mix flour, cornstarch, cayenne pepper, and a pinch of salt.
Coat & Fry the Chicken:
Heat vegetable oil in a deep pan to 350°F (175°C).
Remove chicken from the buttermilk, letting excess drip off.
Dredge in the flour mixture, pressing to coat well.
Fry for 5-7 minutes per side until golden brown and crispy.
Place on a wire rack to drain excess oil.
Make the Spicy Sauce:
Mix mayonnaise, hot sauce, honey, Dijon mustard, and smoked paprika until smooth.
Toast the Buns:
Spread butter on the brioche buns and toast on a skillet until golden brown.
Assemble the Sandwich:
Spread spicy sauce on both buns.
Place crispy fried chicken on the bottom bun.
Top with melted cheese, extra sauce, and pickles if desired.
Close with the top bun.
