Turmeric Chickpea Soup
This rich and creamy turmeric chickpea soup is the ultimate comfort food, perfect for a chilly fall evening. 2 tbsp extra virgin olive oil
1 medium onion, chopped
4 garlic cloves, minced
1 large carrot, chopped
1 large celery stalk, chopped
1 cup butternut squash, cubed
2 tsp turmeric
1 tsp thyme leaves
2 cans (15 oz) chickpeas, drained
4 cups vegetable broth
4 cups dark leafy greens, chopped
2 tbsp lemon juice
Salt & pepper to taste
Directions:
1. Sauté onion in olive oil for 2-3 minutes. Add garlic, carrot, and celery, cooking for 1 minute.
2. Add chickpeas, butternut squash, thyme, turmeric, broth, salt, and pepper. Simmer for 10 minutes.
3. Blend soup until smooth. Return to pot, add lemon juice and greens. Cook for 8-10 minutes.
4. Serve hot, garnished with parsley or roasted chickpeas.
