Turkish Flatbread

Description

1 can (15 oz) chickpeas, drained and rinsed
½ cup crumbled feta cheese
¼ cup dried cherries
½ cup cucumber, diced
½ cup cherry tomatoes, halved
¼ cup red onion, finely chopped
¼ cup fresh parsley, chopped
2 tbsp toasted almonds or walnuts (optional)
For the Lemon Dressing:
3 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp honey or maple syrup
½ tsp Dijon mustard
½ tsp dried oregano
Salt and black pepper to taste
Directions:
In a large bowl, combine chickpeas, feta cheese, dried cherries, cucumber, cherry tomatoes, red onion, parsley, and toasted nuts if using.
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, oregano, salt, and black pepper until well combined.
Pour the dressing over the salad and toss gently to coat all .
Let the salad sit for 10-15 minutes to allow the flavors to meld together.
Serve chilled or at room temperature. Enjoy!
