Thumbprint Cookies with Jam
Ingredients:

1 cup unsalted butter, softened

½ cup granulated sugar

1 large egg yolk

1 tsp vanilla extract

2 cups all-purpose flour

½ tsp salt

½ cup raspberry or strawberry jam

Crushed peppermint or sprinkles (optional, for topping)

Instructions:

1. Prepare the Dough: In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Add the egg yolk and vanilla extract, mixing until fully combined. Gradually add the flour and salt, mixing until the dough forms.

2. Shape the Cookies: Preheat the oven to 350°F (175°C). Roll the dough into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.

3. Create the Indent: Use your thumb or the back of a teaspoon to press a small indent into the center of each dough ball.

4. Add the Jam: Fill each indent with a small spoonful of jam.

5. Bake: Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.

6. Optional Garnish: Sprinkle crushed peppermint or colorful sprinkles over the jam while the cookies are still warm.

7. Serve: Allow to cool completely before serving. These cookies are perfect for holidays or as a sweet treat with tea or coffee!
