1 kg butternut squash, diced
4 cloves garlic, minced
500 ml vegetable stock
100 g Grana Padano, grated
500 g penne pasta
1 tbsp olive oil
Directions:
1. Cook penne pasta as per instructions, drain, and set aside.
2. Sauté garlic in olive oil until soft. Add squash and cook until golden.
3. Pour in vegetable stock, simmer until squash is tender.
4. Blend squash into a smooth sauce, mix with Grana Padano and pasta.
