1 kg butternut squash, diced
4 cloves garlic, minced
500 ml vegetable stock
100 g Grana Padano, grated
500 g penne pasta
1 tbsp olive oil
Directions:
1. Cook penne according to package. Drain and set aside.
2. Sauté garlic in olive oil over medium heat until fragrant.
3. Add squash, cook until golden. Pour in stock, simmer until tender.
4. Blend squash and some stock until smooth.
