1 kg butternut squash, diced small
4 cloves garlic, minced
500 ml vegetable stock
100 g Grana Padano, grated
500 g penne pasta
1 tbsp olive oil
Directions:
1. Cook penne pasta according to package instructions. Drain and set aside.
2. Sauté garlic in olive oil until soft.
3. Add butternut squash, cook until golden. Pour in stock, simmer until tender.
