500g butternut squash, chopped
3 sprigs rosemary, chopped
4 cloves garlic
1 yellow onion, sliced
2 tbsp olive oil
500g gnocchi
50g parmesan, grated
Juice of 1 lemon
30g walnuts, chopped
75ml milk
50g pancetta, chopped
1 mozzarella ball, torn
Directions:
1. Roast squash, onion, and garlic at 180°C for 30 mins.
2. Blend roasted veggies into a purée.
3. Fry pancetta, then cook gnocchi in purée with milk.
4. Add parmesan, lemon juice, and top with mozzarella.
5. Grill until cheese melts.
