Thai Coconut Shrimp Curry

This Thai-inspired coconut shrimp curry is perfect for a quick weeknight meal or even a special dinner party. 1 lb shrimp, peeled and deveined
1 tsp soy sauce
½ tsp red pepper flakes
½ tsp turmeric
1 tbsp oil + 1 tbsp butter
1 bell pepper, sliced
4 garlic cloves, grated
1 shallot, finely chopped
3 tbsp red curry paste
1 can (14 oz) coconut milk
½ lime, juiced
Handful of Thai basil

Directions:
1. Mix shrimp with spices, set aside.
2. Sear shrimp, remove from skillet.
3. Sauté bell pepper, add garlic, ginger, shallot. Deglaze with broth.
4. Add curry paste, spices, coconut milk. Simmer.
5. Toss in shrimp, add lime juice and basil.
