1 lb chicken breast, diced
2 tbsp red curry paste
1 can (13.5 oz) coconut milk
2 cups chicken broth
1 cup sliced carrots
1 cup bell peppers, diced
1 cup mushrooms, sliced
2 tbsp fish sauce
1 tbsp lime juice
1 tsp sugar
Fresh cilantro and lime wedges for garnish

Directions:
1. Heat a pot over medium heat, add curry paste, and stir until aromatic.
2. Add diced chicken, cook until lightly browned.
