Tangy Greek Pasta Salad with Cranberries, Feta & Sun-Dried Tomatoes

Description

1 cup cottage cheese
1/4 cup cocoa powder
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1/4 cup milk of choice (adjust for desired consistency)
Pinch of salt
1/4 teaspoon cinnamon (optional)
1/4 cup dark chocolate chips (optional, for extra richness)
Directions
In a blender or food processor, combine cottage cheese, cocoa powder, honey, vanilla extract, milk, salt, and cinnamon (if using).
Blend until smooth and creamy. If needed, add more milk to adjust the consistency.
If using, melt dark chocolate chips and mix into the mousse for extra richness.
Taste and adjust sweetness as needed.
Transfer to serving dishes and chill in the refrigerator for at least 30 minutes.
Serve topped with fresh berries, shaved chocolate, or a dollop of whipped cream.
