Sweet and Spicy Roasted Sweet Potatoes

Ingredients

4 medium sweet potatoes, peeled and cubed
2 tbsp olive oil
2 tbsp honey or maple syrup
1 tsp ground cinnamon
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (adjust for heat preference)
1/2 tsp garlic powder
Salt and black pepper to taste
Directions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Prepare the Sweet Potatoes: Place the cubed sweet potatoes in a large mixing bowl.

Season: Drizzle the sweet potatoes with olive oil and honey (or maple syrup). Sprinkle with cinnamon, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper. Toss to coat evenly.

Roast: Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Roast for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.

Serve: Remove from the oven and let cool slightly. Serve warm as a flavorful side dish!
