Stuffed Salmon with Spinach & Feta

This stuffed salmon recipe is the perfect combination of simplicity and elegance. Inspired by a Whole Foods creation, this homemade version features a Mediterranean mix of spinach, feta, and roasted red peppers. It’s easy enough for a weeknight dinner, yet impressive for a dinner party. With each bite, you’ll experience the delightful blend of creamy feta and perfectly seasoned salmon. Ready in about 30 minutes, it’s a nutritious, crowd-pleasing meal packed with flavor and heart-healthy omega-3s.

4x 6 oz salmon pieces
2 Tbsp olive oil
3 cups baby spinach
1 tsp Italian seasoning
1/2 tsp paprika
Pinch of cayenne
5.3 oz feta cheese
1/4 cup parmesan, grated
1/4 cup roasted red peppers, chopped
Salt + pepper

Directions:
1. Preheat oven to 400°F.
2. Slice salmon, season, and stuff with sautéed spinach-feta mix.
3. Bake 12-17 mins.
