Stuffed Pepper Soup
Ingredients
1 lb ground beef or turkey
1 medium onion (diced)
3 bell peppers (red, green, yellow, diced)
2 cloves garlic (minced)
4 cups beef broth
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup cooked white rice
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
Salt and black pepper to taste
Directions
Cook the ground beef or turkey in a large pot over medium heat until browned. Drain excess fat.
Add diced onion, garlic, and bell peppers to the pot. Sauté for 5-7 minutes until softened.
Pour in the beef broth, diced tomatoes, and tomato sauce. Stir to combine.
Season with Italian seasoning, smoked paprika, salt, and black pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 20-25 minutes to blend flavors.
Stir in cooked rice just before serving. Taste and adjust seasonings as needed.
Serve hot with a sprinkle of parsley, if desired.
