2 boneless, skinless chicken breasts
2 cups cooked rice
2 ears corn, husked
1/4 cup mayonnaise
1/4 cup sour cream
1/2 cup crumbled Cotija cheese
1/4 cup chopped cilantro
1 lime, cut into wedges
1 tsp chili powder
Salt & pepper
2 tbsp olive oil
