Strawberry Frosted Cherry Cookies

Ingredients:

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup cherry preserves
1 cup powdered sugar
2 tablespoons strawberry puree
1 tablespoon milk
Sparkling sugar for garnish
Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Scoop tablespoon-sized balls of dough onto the prepared baking sheet. Use your thumb or the back of a spoon to create an indentation in the center of each cookie.
Fill each indentation with a small spoonful of cherry preserves.
Bake for 10-12 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
In a small bowl, whisk together the powdered sugar, strawberry puree, and milk to make the frosting. Spread the frosting over the cooled cookies and sprinkle with sparkling sugar.
if you desire a more vibrant or consistent pink color, you can add a few drops of pink food coloring.
