Stir-Fried Baby Bok Choy with Soy Garlic Glaze

Description

1 lb Brussels sprouts, trimmed and halved
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp maple syrup
Salt and black pepper to taste
1 flatbread (store-bought or homemade)
½ cup goat cheese, crumbled
1 tbsp fresh thyme leaves (optional)
1 tbsp honey (optional, for drizzling)
Directions:
Preheat your oven to 400°F (200°C).
Toss the Brussels sprouts in olive oil, balsamic vinegar, maple syrup, salt, and black pepper. Spread them in a single layer on a baking sheet.
Roast for 20-25 minutes, tossing halfway through, until Brussels sprouts are golden brown and crispy on the edges.
While the Brussels sprouts are roasting, prepare the flatbread. Place it on a baking sheet or pizza stone.
Once the Brussels sprouts are done, remove from the oven and set aside.
Top the flatbread with crumbled goat cheese and roasted Brussels sprouts.
Bake the flatbread for 10-12 minutes, or until the cheese is melted and bubbly.
Drizzle with honey and sprinkle with fresh thyme leaves before serving. Enjoy!
