Recipes:
1 can (15 oz) chickpeas, drained and rinsed
2 tablespoons pesto
Zest and juice of 1 lemon
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes (optional)
1 ball burrata cheese
2 tablespoons pine nuts, toasted
Fresh basil leaves, for garnish
Directions:
In a medium skillet over medium heat, warm the olive oil. Add the chickpeas and sauté for 2-3 minutes.
Stir in the pesto, lemon zest, lemon juice, salt, black pepper, and red pepper flakes if using. Cook for another 2-3 minutes, allowing the flavors to meld.
Remove from heat and transfer the chickpeas to a serving plate.
Tear the burrata cheese and place it on top of the chickpeas.
Sprinkle with toasted pine nuts and garnish with fresh basil.
Serve warm or at room temperature with crusty bread or as a side dish.
