Spinach and Rigatoni Salad with Cranberries and Almonds

Description

For the Salad:
6 cups mixed greens (spinach, arugula, or romaine)
½ cup dried cranberries
½ cup crumbled feta cheese
½ cup walnuts, toasted and chopped
1 small apple, thinly sliced
¼ small red onion, thinly sliced
For the Lemon Vinaigrette:
¼ cup olive oil
2 tbsp fresh lemon juice
1 tbsp honey or maple syrup
1 tsp Dijon mustard
½ tsp salt
¼ tsp black pepper
Directions:
In a large bowl, combine the mixed greens, dried cranberries, feta cheese, toasted walnuts, apple slices, and red onion.
In a small jar or bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper until well emulsified.
Drizzle the vinaigrette over the salad and toss gently to coat.
Serve immediately and enjoy!
