Spicy Thai Chicken Salad
Ingredients
For the Salad:
2 cups cooked shredded chicken
1 cup cucumber slices
1 cup shredded carrots
1/4 cup fresh cilantro, chopped
1/4 cup roasted peanuts
2 tbsp dried red chilies (optional)
For the Dressing:
3 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp lime juice
1 tbsp honey or brown sugar
1 tbsp sesame oil
1 tsp sriracha (adjust to taste)
1 garlic clove, minced
Directions
Make the Dressing: In a small bowl, whisk together soy sauce, rice vinegar, lime juice, honey, sesame oil, sriracha, and minced garlic until smooth.
Assemble the Salad: In a large mixing bowl, combine shredded chicken, cucumber, carrots, cilantro, and roasted peanuts. Add the dried red chilies if you like extra heat.
Toss with Dressing: Pour the dressing over the salad and toss everything together until evenly coated.
Serve: Transfer to a serving bowl, garnish with extra cilantro and peanuts, and enjoy immediately.
