16 oz brown rice noodles
3 large garlic cloves, minced
1 tbsp grated ginger
1 tbsp oil
⅔ cup peanut butter (low/no salt)
4 tbsp low sodium tamari/soy sauce
1-2 tbsp sriracha
1 tbsp rice vinegar
1 tbsp toasted sesame oil
1-2 tbsp maple syrup/honey
Directions:
1. Cook noodles as per instructions.
2. Sauté garlic in oil until golden. Add ginger, then remaining sauce ingredients, and whisk until smooth.
3. Mix sauce with noodles and serve with desired toppings.
