Spicy Chorizo Potatoes
Ingredients
1.5 lbs baby potatoes, quartered
1/2 lb chorizo, crumbled
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Fresh parsley for garnish
Directions
Boil the potatoes:
Place quartered potatoes in a pot of salted water. Boil for 8-10 minutes, or until just fork-tender. Drain and set aside.
Cook the chorizo:
In a large skillet, cook the crumbled chorizo over medium heat until browned and crispy. Remove and set aside, leaving the rendered fat in the pan.
Crisp the potatoes:
Add olive oil to the skillet with the chorizo fat. Toss in the potatoes and season with smoked paprika, garlic powder, onion powder, salt, and pepper. Cook over medium-high heat until golden and crispy, about 10 minutes.
Combine and serve:
Stir the cooked chorizo back into the skillet with the potatoes. Garnish with fresh parsley and serve hot!
