Spicy Cheese Fries
Ingredients
For the Fries:
4 medium-sized potatoes, cut into fries or use frozen fries
Vegetable oil for frying
Salt to taste
For the Spicy Cheese Sauce:
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
1 1/2 cups shredded cheddar cheese
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to your spice preference)
Salt and pepper to taste
Instructions
Prepare the Fries
If using fresh potatoes, soak the cut fries in cold water for 30 minutes to remove excess starch, then pat dry.
Heat oil in a deep fryer or skillet to 175°C (350°F). Fry the potatoes until golden and crispy. Drain on paper towels and season with salt.
Make the Spicy Cheese Sauce
In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes.
Gradually whisk in milk, stirring continuously until the mixture thickens.
Add the shredded cheddar cheese, smoked paprika, cayenne pepper, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
Assemble the Dish
Place the fries on a plate or in a serving container. Drizzle the spicy cheese sauce generously over the fries.
