Smokey Halloumi Pasta Bake

300g dried pasta
2 tbsp olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 tsp smoked paprika
250g halloumi, cubed
1 large courgette, cubed
160g mature cheddar, grated
800g canned chopped tomatoes
Pinch of salt & black pepper
Directions:
1. Preheat oven to 200°C.
2. Cook pasta for 5 minutes, drain.
3. Fry onion, garlic, and 1 tsp paprika in oil.
4. Add courgettes, halloumi, fry 3-5 mins.
5. Add tomatoes & pepper, heat until bubbling.
6. Combine with pasta, pour into greased tray.
7. Top with cheddar, sprinkle paprika.
8. Bake 10 mins. Serve hot!
