Smoked Sausage, Cabbage, and Potato Skillet
Ingredients
1 lb (450g) smoked sausage, sliced
1/2 head green cabbage, chopped
3 medium potatoes, diced
1 can (14 oz) diced tomatoes
1 medium onion, chopped
3 garlic cloves, minced
2 tbsp olive oil
1 tsp smoked paprika
1 tsp dried thyme
Salt and pepper to taste
Fresh parsley for garnish
Directions
Cook the sausage: Heat olive oil in a large skillet over medium heat. Add sliced smoked sausage and cook until browned. Remove and set aside.
Sauté veggies: In the same skillet, add onions and garlic. Sauté for 2-3 minutes until softened. Add diced potatoes and cook for 5-7 minutes, stirring occasionally.
Add cabbage and tomatoes: Stir in chopped cabbage and canned diced tomatoes (with juice). Season with smoked paprika, thyme, salt, and pepper.
Simmer: Return the sausage to the skillet. Cover and cook on low heat for 15-20 minutes, stirring occasionally, until the potatoes are tender and the cabbage is softened.
Garnish and serve: Sprinkle fresh parsley on top and serve hot!
