Slow Cooker Split Pea Sausage Soup
Ingredients
1 lb dried green split peas, rinsed
1 lb smoked sausage or kielbasa, sliced
1 ham hock or 1 cup diced ham (optional, for extra flavor)
1 large onion, diced
3 carrots, peeled and diced
3 celery stalks, diced
3 cloves garlic, minced
6 cups chicken or vegetable broth
1 tsp dried thyme
1/2 tsp smoked paprika
Salt and pepper, to taste
Directions
Add split peas, sausage, ham hock (if using), onion, carrots, celery, garlic, thyme, and paprika to the slow cooker.
Pour in chicken or vegetable broth and stir to combine. Season with salt and pepper.
Cover and cook on LOW for 8-10 hours or HIGH for 4-6 hours, stirring occasionally. The peas will break down and thicken the soup.
Remove the ham hock (if used) and shred any meat into the soup. Stir well before serving.
Serve warm with crusty bread or garlic toast on the side!
