Slow Cooker Beef Burritos Recipe

Ingredients
2 lbs beef chuck roast
1 packet taco seasoning (or homemade)
1 cup beef broth
1 can (10 oz) enchilada sauce
2 cloves garlic, minced
1 small onion, chopped
6 large flour tortillas
2 cups shredded cheddar cheese
1 cup Monterey Jack cheese, shredded
Fresh cilantro, chopped (for garnish)
Cherry tomatoes, halved (optional)
Instructions
Prepare the Beef:

Rub the taco seasoning all over the beef roast.
Place it in the slow cooker with beef broth, enchilada sauce, garlic, and onion.
Slow Cook:

Cover and cook on LOW for 8 hours or HIGH for 4 hours, until the beef is tender and easily shredded.
Shred the Beef:

Remove the beef, shred it using two forks, and return it to the sauce. Stir well.
Assemble the Burritos:

Spoon the shredded beef onto each tortilla.
Sprinkle with cheddar cheese, roll tightly, and place seam-side down in a baking dish.
Add Sauce & Cheese:

Pour remaining sauce from the slow cooker over the burritos.
Sprinkle with Monterey Jack cheese.
Bake:

Bake at 375°F (190°C) for 10-15 minutes until the cheese is melted and bubbly.
Garnish & Serve:

Top with fresh cilantro and cherry tomatoes. Serve hot!
