Slow Cooker Beef and Broccoli
Ingredients
2 lbs beef stew meat (cut into bite-sized pieces)
1 cup beef broth
1/2 cup low-sodium soy sauce
1/4 cup brown sugar
2 tbsp sesame oil
4 garlic cloves (minced)
1 tbsp ginger (grated)
1/4 cup cornstarch
1/4 cup water
4 cups fresh broccoli florets (steamed)
Optional: diced bell peppers for extra flavor
Directions
Prepare the sauce:
In a bowl, whisk together beef broth, soy sauce, brown sugar, sesame oil, garlic, and ginger.
Assemble in the slow cooker:
Place the beef pieces in the slow cooker and pour the sauce over the top. Stir to coat evenly.
Cook low and slow:
Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until the beef is tender.
Thicken the sauce:
Mix cornstarch and water to make a slurry. Stir it into the slow cooker during the last 30 minutes of cooking to thicken the sauce.
Add the broccoli:
Steam broccoli florets until tender-crisp and stir them into the beef just before serving.
Serve & enjoy:
Pair with steamed rice or noodles for the perfect comforting meal!
