Skillet Chicken with Mushrooms and Caramelized Onions Recipe

Ingredients
2 large chicken breasts (boneless, skinless)
2 tbsp olive oil
1 tbsp butter
1 large onion, thinly sliced
8 oz mushrooms, sliced
3 cloves garlic, minced
1/2 cup chicken broth
1 tbsp balsamic vinegar
1 tsp thyme (fresh or dried)
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Prepare the Chicken:

Season chicken breasts with salt and black pepper on both sides.
Sear the Chicken:

Heat olive oil in a skillet over medium-high heat.
Sear chicken for 5-6 minutes on each side until golden and cooked through. Remove and set aside.
Caramelize Onions:

In the same skillet, add butter and sliced onions.
Cook over medium heat for 10-12 minutes, stirring occasionally until soft and golden.
Add Mushrooms and Garlic:

Add sliced mushrooms and cook for another 5 minutes.
Stir in garlic, thyme, and cook for 1-2 minutes.
Deglaze the Pan:

Pour in chicken broth and balsamic vinegar, scraping up browned bits.
Simmer for 3-4 minutes until slightly reduced.
Combine and Serve:

Return chicken to the skillet, spooning the sauce over the top.
Simmer for 2-3 minutes until heated through.
Garnish and Enjoy:

Sprinkle with fresh parsley and serve over mashed potatoes, rice, or pasta.
