Shrimp Spring Rolls
Ingredients:

1 cup cooked shrimp, finely chopped

1/4 cup cream cheese, softened

2 tbsp green onions, finely chopped

1 tbsp soy sauce

1/2 tsp garlic powder

1/2 tsp paprika (optional)

10 spring roll wrappers

Vegetable oil (for frying)

Instructions:

1. Prepare the Filling:

In a bowl, mix the chopped shrimp, cream cheese, green onions, soy sauce, garlic powder, and paprika until well combined.

2. Assemble the Spring Rolls:

Lay one spring roll wrapper flat on a clean surface. Place about 1-2 tablespoons of the shrimp mixture near one corner of the wrapper.

Fold the corner over the filling, then fold in the sides and roll tightly, sealing the edge with a bit of water. Repeat for the remaining wrappers and filling.

3. Heat the Oil:

In a deep pan, heat about 2 inches of vegetable oil to 350°F (175°C).

4. Fry the Spring Rolls:

Fry the spring rolls in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes per batch).

Remove and place on a paper towel-lined plate to drain excess oil.

5. Serve:

Serve warm with your favorite dipping sauce, such as spicy mayo, sweet chili sauce, or soy sauce.
