Ingredients

For the casserole:
12 oz pasta (rotini, penne, or your choice)
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon garlic powder
1 teaspoon paprika
1 teaspoon onion powder
2 cups shredded cheddar cheese
1 cup grated Parmesan cheese
1 1/2 cups heavy cream
1/2 cup chicken broth
Salt and pepper to taste
Fresh parsley for garnish
Instructions

Cook the Pasta:
Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
Cook the Shrimp:
In a large skillet, heat olive oil over medium heat. Season the shrimp with garlic powder, paprika, onion powder, salt, and pepper.
Cook the shrimp for 2-3 minutes per side until they are pink and cooked through. Set aside.
Prepare the Sauce:
In the same skillet, add the heavy cream and chicken broth. Bring to a simmer and let it cook for 3-4 minutes until it begins to thicken.
Stir in 1 cup of cheddar cheese and the Parmesan cheese. Continue to stir until the cheese is melted and the sauce is smooth.
Assemble the Casserole:
Preheat your oven to 350°F (175°C).
In a large casserole dish, mix the cooked pasta and cheese sauce. Gently fold in the cooked shrimp.
Top the casserole with the remaining 1 cup of cheddar cheese and bake for 20-25 minutes, until the cheese is bubbly and golden on top.
Serve:
Garnish with fresh parsley before serving.
