Ingredients:
For the shrimp:
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
2 cloves garlic, minced
1 tablespoon lemon juice
For the pasta:
8 oz penne or rigatoni pasta
Salt for the pasta water
For the Alfredo sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups heavy cream
1 cup milk
1 1/2 cups grated Parmesan cheese
1 teaspoon garlic powder
Salt and pepper to taste
For the topping:
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh parsley, chopped for garnish
Instructions:
Cook the pasta:
Preheat your oven to 375°F (190°C).
Cook the pasta according to package directions in salted water. Drain and set aside.
Prepare the shrimp:
Heat olive oil in a large skillet over medium heat.
Season the shrimp with salt, pepper, minced garlic, and lemon juice.
Cook the shrimp for 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.
Make the Alfredo sauce:
In the same skillet, melt butter over medium heat.
Add the flour and whisk to form a roux, cooking for about 1 minute.
Gradually add the heavy cream and milk, whisking constantly until the sauce thickens, about 4-5 minutes.
