Sheet Pan Sausage with Brussels Sprouts and Potatoes

Ingredients

4 Italian sausages (mild or spicy)
1 lb (450g) baby potatoes, halved
2 cups Brussels sprouts, halved
2 tbsp olive oil
2 tbsp balsamic glaze (optional, for drizzling)
1/2 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper, to taste
2 tbsp sliced almonds (optional, for garnish)
1 tbsp fresh parsley, chopped
Directions

Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Season Veggies: In a large bowl, toss baby potatoes and Brussels sprouts with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them evenly on the baking sheet.

Add Sausages: Nestle the sausages among the vegetables.

Roast: Bake for 30-35 minutes, flipping the veggies and sausages halfway through, until the vegetables are tender and golden and the sausages are cooked through.

Optional Glaze & Garnish: Drizzle with balsamic glaze, sprinkle with sliced almonds and fresh parsley before serving.
