Sesame Chicken Stir-Fry

Ingredients

1 lb chicken breast, diced
2 cups broccoli florets
1 red bell pepper, diced
2 tbsp olive oil
2 cloves garlic, minced
1/4 cup low-sodium soy sauce
2 tbsp honey
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp cornstarch + 1 tbsp water (slurry)
1 tbsp sesame seeds
2 green onions, sliced
Directions

Prepare the sauce:

In a small bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, and cornstarch slurry. Set aside.
Cook the chicken:

Heat 1 tbsp olive oil in a large skillet or wok over medium-high heat. Add chicken and cook until golden and cooked through, about 5-6 minutes. Remove and set aside.
Sauté veggies:

In the same skillet, add remaining olive oil, broccoli, and red bell pepper. Cook for 4-5 minutes until tender-crisp.
Combine:

Return chicken to the skillet, pour in the sauce, and stir well. Cook for another 2-3 minutes until the sauce thickens and coats the chicken and veggies.
Garnish:

Sprinkle with sesame seeds and sliced green onions. Serve hot over steamed rice or noodles.
