Sesame Chicken Stir-Fry

Ingredients

For the Stir-Fry:

1 lb chicken breast, cut into bite-sized pieces
2 cups broccoli florets
1 red bell pepper, sliced
2 green onions, chopped
2 tbsp olive oil
1 tbsp sesame seeds (for garnish)
For the Sauce:

1/4 cup soy sauce
2 tbsp honey or maple syrup
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp ginger, grated
2 garlic cloves, minced
1 tbsp cornstarch mixed with 2 tbsp water
Directions

Cook the Chicken: Heat 1 tbsp olive oil in a large skillet or wok over medium heat. Add chicken and cook until browned and fully cooked (about 5-7 minutes). Remove from skillet and set aside.

Sauté the Veggies: Add the remaining 1 tbsp olive oil to the skillet. Toss in broccoli and bell peppers. Cook for 5 minutes until crisp-tender.

Make the Sauce: In a small bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, ginger, garlic, and the cornstarch mixture.

Combine Everything: Return the chicken to the skillet. Pour the sauce over the chicken and veggies, stirring constantly until the sauce thickens (about 2-3 minutes).

Serve: Garnish with sesame seeds and green onions. Serve over steamed rice or noodles.
