Sausage Tortellini Soup
Ingredients
1 lb Italian sausage (mild or spicy), sliced or crumbled
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 zucchini, sliced
1 green bell pepper, diced
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
1 package (9 oz) cheese tortellini (refrigerated or frozen)
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional, for serving)
Directions
Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned. Remove and set aside.
In the same pot, sauté onion and garlic for 2-3 minutes until fragrant.
Add zucchini and bell pepper, cooking for another 3-4 minutes until slightly tender.
Pour in diced tomatoes and chicken broth. Stir in Italian seasoning, red pepper flakes, salt, and pepper. Bring to a simmer.
Add the cooked sausage back to the pot. Simmer for 10 minutes to let flavors combine.
Stir in the tortellini and cook according to package instructions (usually 3-5 minutes) until tender.
Garnish with fresh parsley and Parmesan cheese before serving.
