Salted Caramel Chocolate Cake
Ingredients:
For the Cake:
2 cups all-purpose flour
1 ¾ cups granulated sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the Salted Caramel Sauce:
1 cup granulated sugar
6 tablespoons unsalted butter, cubed
½ cup heavy cream
1 teaspoon sea salt
For the Chocolate Ganache:
1 cup semi-sweet chocolate chips
½ cup heavy cream
For Garnish:
Sea salt flakes
Instructions:
Cake Preparation:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, mix together flour, sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla, beating on medium speed for 2 minutes. Stir in the boiling water (batter will be thin).
Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Salted Caramel Sauce:
In a saucepan over medium heat, melt the sugar while stirring constantly until it turns amber in color. Add the butter and stir until melted. Slowly pour in the heavy cream while stirring continuously. Remove from heat and stir in the sea salt. Let it cool.
Chocolate Ganache:
Place chocolate chips in a heatproof bowl. In a saucepan, heat the cream until it just begins to boil. Pour the hot cream over the chocolate and let it sit for 2 minutes. Stir until smooth.
Assembly:
Place one cake layer on a serving plate. Spread a layer of salted caramel sauce over the top. Place the second cake layer on top and cover the cake with chocolate ganache. Drizzle with more salted caramel sauce and sprinkle sea salt flakes on top. Enjoy!
