Ingredients:
2 salmon fillets

1 lb baby potatoes, halved

1 bunch asparagus, trimmed

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped

1/2 teaspoon paprika

Instructions:
Preheat the oven: Preheat your oven to 400°F (200°C).

Prepare the potatoes: Place the halved baby potatoes on a baking sheet. Drizzle with olive oil, sprinkle with salt, pepper, garlic powder, and paprika. Toss to coat evenly, then roast in the oven for 20-25 minutes, or until golden and crispy.

Prepare the asparagus: While the potatoes are roasting, arrange the asparagus on a separate baking sheet. Drizzle with a bit of olive oil, and season with salt and pepper. Roast in the oven for 15-20 minutes, until tender.

Prepare the salmon: Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Place the salmon on the baking sheet with the asparagus during the last 10 minutes of roasting.
