1 lb ground chicken
1/2 cup breadcrumbs
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
1/4 cup fresh parsley, chopped
1/2 cup marinara sauce
1 tablespoon olive oil
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
In a large bowl, combine the ground chicken, breadcrumbs, mozzarella cheese, Parmesan cheese, egg, garlic, Italian seasoning, salt, black pepper, red pepper
flakes (if using), and parsley. Mix until well combined.
Use your hands or a cookie scoop to form the mixture into meatballs, about 1 1/2 inches in diameter, and place them on the prepared baking sheet.
Lightly brush the tops of the meatballs with olive oil. Bake for 18-20 minutes or until golden brown and cooked through (internal temperature should reach
165°F or 74°C).
Remove from the oven and spoon marinara sauce over the meatballs. Optionally, sprinkle extra mozzarella cheese on top and broil for 2-3 minutes until bubbly.
Serve warm, garnished with extra Parmesan and fresh parsley if desired.
