Roasted Figs with Goat Cheese, Honey & Walnuts

Description

For the Flatbread
1 package (about 8 oz) flatbread or naan
1/2 cup ricotta cheese
1/4 cup cream cheese, softened
1/2 cup fresh cranberries, halved
2 tablespoons honey
1 tablespoon olive oil
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon fresh thyme leaves
1/4 cup shredded mozzarella cheese (optional)
For the Garnish
Fresh arugula (optional)
Crushed walnuts (optional)
Directions
Preheat your oven to 375°F (190°C). Place the flatbread on a baking sheet.
In a small bowl, combine ricotta cheese, cream cheese, honey, cinnamon, and salt. Spread the mixture evenly over the flatbread.
Scatter the halved cranberries on top of the cheese mixture, then drizzle with olive oil.
Bake for 12-15 minutes, or until the edges of the flatbread are golden and the cheese has melted.
If using mozzarella cheese, sprinkle it over the flatbread in the last 5 minutes of baking.
Remove from the oven and garnish with fresh thyme leaves, arugula, and crushed walnuts if desired.
Slice and serve warm as an appetizer or light meal.
