12 oz farfalle pasta
1 cup crumbled feta cheese
1/2 cup dried cranberries
1/2 cup chopped cucumber
1/4 cup red onion, thinly sliced
1/4 cup chopped fresh parsley
For the White Balsamic Dressing:
3 tbsp white balsamic vinegar
1/4 cup extra virgin olive oil
1 tbsp Dijon mustard
1 tsp honey
1/2 tsp salt
1/4 tsp black pepper
Directions:
Cook farfalle pasta according to package instructions. Drain, rinse under cold water, and set aside.
In a small bowl, whisk together white balsamic vinegar, olive oil, Dijon mustard, honey, salt, and black pepper to make the dressing.
In a large mixing bowl, combine the cooked pasta, feta cheese, dried cranberries, cucumber, red onion, and fresh parsley.
Drizzle the white balsamic dressing over the salad and toss gently to combine.
