Recipes:
2 large onions, sliced into thick rings
1 cup mozzarella cheese, shredded
1/2 cup cream cheese, softened
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
Vegetable oil for frying
Directions:
Peel and slice the onions into thick rings, carefully removing the inner layers to create “rings.”
In a small bowl, combine the mozzarella cheese, cream cheese, garlic powder, onion powder, and black pepper. Stir until smooth and well mixed.
Carefully stuff each onion ring with the cheesy mixture, pressing the cheese in to fill it completely. Set aside.
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and Parmesan cheese.
Coat each stuffed onion ring first in the flour, then dip it into the beaten eggs, and finally coat it in the breadcrumb-Parmesan mixture.
Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry the onion rings in batches for 3-4 minutes, or until golden brown and crispy.
Remove the onion rings from the oil and place them on a paper towel to drain excess oil.
Serve immediately with dipping sauce of choice.
