Refreshing Watermelon Salad

Ingredients

4 cups watermelon, cubed
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1/4 cup crumbled feta cheese
1 tbsp fresh mint, chopped
Juice of 1 lime
1 tbsp olive oil
Salt and pepper to taste
Optional: Red chili flakes for a spicy kick
Directions

Combine ingredients:
In a large bowl, toss the watermelon, cucumber, red onion, cilantro, and mint.

Make the dressing:
Whisk together lime juice, olive oil, salt, and pepper. Drizzle over the salad and toss gently.

Add the toppings:
Sprinkle feta cheese and red chili flakes (if desired) on top.

Serve:
Chill for 10-15 minutes before serving to allow the flavors to meld. Serve as a side dish or a light appetizer!
