Ravioli with Spinach, Sun-Dried Tomatoes, and Capers

Ingredients

1 package (9 oz) fresh cheese ravioli
2 tbsp olive oil
2 garlic cloves (minced)
1 cup fresh spinach
1/4 cup sun-dried tomatoes (sliced)
2 tbsp capers (drained)
1/4 cup grated Parmesan cheese
Salt & pepper to taste
Red chili flakes (optional, for heat)
Directions

Cook the Ravioli: Bring a large pot of salted water to a boil. Cook ravioli according to package instructions. Drain and set aside.
Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant.
Add Spinach & Tomatoes: Stir in fresh spinach, sun-dried tomatoes, and capers. Cook for 2-3 minutes until the spinach wilts.
Combine with Ravioli: Gently add the cooked ravioli to the skillet. Toss to coat in the flavorful sauce. Season with salt, pepper, and chili flakes if desired.
Garnish & Serve: Plate the ravioli and sprinkle generously with grated Parmesan cheese. Serve warm.
