Pineapple Layer Cake
Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tsp vanilla extract
1 cup crushed pineapple, drained
1/2 cup pineapple juice
For the Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup pineapple juice
1 tsp vanilla extract
For Decoration:
Pineapple slices
Whipped cream

Instructions:
1. Prepare the Cake Layers:
Preheat oven to 180°C (350°F). Grease and line three 8-inch round cake pans.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, beat butter and sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla.
Add the dry ingredients alternately with pineapple juice, mixing until just combined. Fold in crushed pineapple.
Divide batter evenly among prepared pans. Bake for 25–30 minutes. Cool completely.
2. Make the Frosting:
Beat butter until creamy. Gradually add powdered sugar, pineapple juice, and vanilla, mixing until smooth and fluffy.
3. Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of frosting. Repeat with remaining layers.
Frost the top and sides of the cake lightly for a “naked” cake effect.
4. Decorate:
Arrange pineapple slices on top. Add swirls of whipped cream for an elegant touch.
